I RECREATED A PINTEREST POTATO RECIPE

 


If you ask me some of the things I enjoy doing, cooking would not be one of them. Unlike my mom and some people I know who enjoy sweating and slaving away in the kitchen, I find it difficult to understand why I should spend 2 hours cooking a meal that would only take me 10 minutes to finish eating. It makes no sense to me BUT for the times when the mood hits me, I allow myself cook certain things I actually enjoy preparing.

One of those things I enjoy cooking is potatoes. I watch countless YouTube videos on every which way I can cook, bake, fry or boil potatoes so when I found this recipe on Pinterest, I could not resist trying it out. Although my potatoes did not come out looking as good as the image, I can guarantee you that it was yum! There were some ingredients I did not readily have at home so I improvised with what I had and other ingredients that the recipe called for that I switched up. Ingredients:

  • 3 Pounds baby red potatoes, washed and quartered
  •  A quarter cup olive oil
  • 6 large cloves of garlic finely chopped or minced
  • Salt & fresh cracked black pepper
  • 1 tbsp Italian seasoning
  • 3/4 cup fresh grated parmesan cheese
  • 1/2 cup unsalted butter
  • Fresh chopped parsley for garnish
I interchanged some ingredients and this is what mine looked like:
  • Irish potatoes (quantity as required)
  • Olive oil
  • garlic powder
  • Bouillon powder as opposed to salt & black pepper
  • Italian seasoning
  • Regular cheese (or any you have at home)
  • Butter
  • Parsley flakes

This recipe also calls for bacon bits which I added but also chose to cut up some sausage franks because I'm extra in that regard. I pan fried it a little bit and set some aside while I added what was left over to bake in the oven with the potatoes.

Cooking/Baking Directions:

  1. Parboil potatoes to precook them till they are tender 
  2. In a large bowl, combine olive oil, garlic, salt/bouillon powder, pepper and parmesan cheese together, mixing to combine. Add more olive oil if the cheese has absorbed most of it
  3. Toss par boiled potatoes through the mixture till evenly coated
  4. Preheat your oven 400*F and grease a large baking sheet with non stick spray
  5. Arrange coated potatoes in a single layer onto the baking sheet and place on the bottom rack of oven. Bake for 25 minutes
  6. In the meantime, gently melt butter in the microwave and combine with parsley.
  7. Remove potatoes from oven after time elapses and drizzle with the butter-parsley sauce. Add bacon bits (and sausage like I had), toss to coat well and serve with garlic butter parmesan immediately..
  8. ENJOY!!

I cooked everything according to the directions with the only difference being that I added my cheese to bake with the potatoes only since I did not specifically have any parmesan. I assure you it tastes just as great as I'm sure the original does. The sausage although looks like it got burnt, it did not and actually enhanced the recipe's flavor.

As you can see from the image above, this is how my version came out looking. The only thing I could have done different was to add more butter than I did but otherwise.....mucha bella😘


This meal was filling and satisfying and I plan on sharing more recipes with you guys on here because I've been chefing it up a lot lately with tons of other meals I've been able to recreate. I'm not even certain what the exact name of this potato recipe is but it leans towards Garlic Parmesan Baked Potatoes. I certainly love it and you certainly should try it. Let me know if you do!!
