If you ask me some of the things I enjoy doing, cooking would not be one of them. Unlike my mom and some people I know who enjoy sweating and slaving away in the kitchen, I find it difficult to understand why I should spend 2 hours cooking a meal that would only take me 10 minutes to finish eating. It makes no sense to me BUT for the times when the mood hits me, I allow myself cook certain things I actually enjoy preparing.
One of those things I enjoy cooking is potatoes. I watch countless YouTube videos on every which way I can cook, bake, fry or boil potatoes so when I found this recipe on Pinterest, I could not resist trying it out. Although my potatoes did not come out looking as good as the image, I can guarantee you that it was yum! There were some ingredients I did not readily have at home so I improvised with what I had and other ingredients that the recipe called for that I switched up. If you would like to try this recipe out yourself, keep reading.

- In the meantime, gently melt butter in the microwave and combine with parsley.
- Remove potatoes from oven after time elapses and drizzle with the butter-parsley sauce. Add bacon bits (and sausage like I had), toss to coat well and serve with garlic butter parmesan immediately..
- ENJOY!!
